granola bars should have their own food group. Sure, they fit in the
grains and nuts. But what if you add dried fruit. And what if you add
chocolate. Yeah, I know, confusing right? And I'll be honest with you,
these granola bars really on the line between healthy snack and dessert
food. But not so on the line that I didn't eat one for breakfast this
morning. :)Granola bars, makes 10 (or more/less depending how you cut them)<br />
2 cups quick cooking oats<br />
1 cup sliced almonds<br />
1/2 cup shredded coconut (I used sweetened but unsweetened is good too)<br />
1/4 cup pistachios<br />
1/4 cup chia seeds<br />
1/4 cup olive oil<br />
4 tablespoons butter<br />
1/4 cup brown sugar<br />
1/3 cup honey or light corn syrup (I used honey)<br />
1 teaspoon vanilla extract<br />
7 oz. dark chocolate<br />
Combine the oats, almonds, coconut, pistachio , chia seeds and olive
oil. Stir so that everything gets coated in the oil. Bake at 350°F for
8-10 minutes, just until toasty. In
a pot over medium heat stir together the butter, sugar, honey and
vanilla extract until the butter melts. Bring to a boil then remove from
the heat. In a bowl combine the granola and butter mixture so that all
the granola gets coated. Line an 8x8 square pan with parchment paper.
Press the granola mix into the pan. Bake at 300°F for 25-28 minutes.Remove the granola from the pan and cut into bars. The granola bars will be soft so be careful removing them from the pan. Melt
the chocolate in the microwave or on the stove top. Add a thin layer of
chocolate to the tops of the bars and use your spoon to spread the
mixture out over the bars. Now lay a piece of wax paper over the bars
and lightly press it into the chocolate. Invert a cooling rack and place
it on top, then flip the bars onto the cooling rack so that the

just a little more chocolate over the tops. Allow the chocolate to set
(to speed up the process you can pop these in the refrigerator for a
bit) then slice through the cuts again. don't always have time to try and pretend to be top chef. You know? (Or
maybe it's only me who does that. Umm, nevermind.) Sometimes we just
finished a particularly busy day at work and realize guests are coming
over that night, like in an hour. Sometimes we just feel too brain dead
to make something up or making something from scratch. It happens.
Sometimes we realize when it's too late we are missing that one
important ingredient we absolutley cannot substitue our way around. And
sometimes we just want to bake something delicious and unfussy. Becuase
it's just fun. I spend a lot of time in the kitchen, and every now and

invented brownies really deserved a life time acheivement award if you
ask me. I LOVE brownies. I love to make them from scratch when I can,
but I also love a good ol' enhanced box mix recipe. Enhanced box mix
recipes are exactly what they sound like: You add stuff to a box mix and
bake. There are so many different varitions out there. Some of my
favorites involve adding cans of soda (cherry cola chocolate cake will
be happening at my house one day!). These brownies got enhanced with
peanut butter chips and salty pretzels.Use
any brownie box mix you like plus the ingredients it calls for. I
usually reduce the amount of water called for by 1/2 to 1 tablespoon.
Less water tends to make brownies more dense and less cake-like. I love a
dense, gooey brownie. Then add a bag of peanut butter chips and a few
handfuls of pretzels.Since
I was using pretzel sticks I tried adding them in a kind of chevron
pattern just for fun. Next time I think I will fill in the pattern so
the entire top has pretzels. MORE PRETZELS. :) Another tip is I usually
line the bottom of my pan with parchment paper before spraying in a
little non-stick cooking spray along the bottom (over the parchment
paper) and along the edges and inner corners of the pan. This makes
getting the brownies out of the pan after baking much easier. Bake

is all about the cobbler. I think cobbler is like the messy, quirky
best friend to pie (like in a romcom). It's delicious although maybe not
as cosmetically perfect as pie. I personally am a big fan of any kind
of cobbler: crumbles, buckles, spoon cakes, etc. I will eat them all,
believe me. This particular cobbler leans a little more toward being a

Choose your own adventure.Blackberry Cobbler, makes 3-4 ramekins<br />
16 ounces blackberries, if frozen allow to thaw before use<br />
2 tablespoons brown sugar<br />
1/3 cup + 2 tablespoons flour<br />
1/4 cup sugar<br />
1/3 teaspoon baking powder<br />
1/4 teaspoon salt<br />
1 egg<br />
2 tablespoon milk<br />
1/4 teaspoon vanilla extract<br />
5 tablespoons melted, then cooled butter<br />
In a bowl mix together the blackberries and brown sugar. Distribute evenly among your baking dishes.<br />
In a bowl whisk together the flour, sugar, baking powder and salt.
Stir in the egg, milk and vanilla extract. Last stir in the melted
butter. This should create a thick paste kind of batter.Spoon
the batter over the berries. Bake at 350°F for 35-40 minutes until the
edges begin to brown. If you double this recipe you can bake this in a
8x8 square baking pan. If doubling allow to cook for an additional 8-10
minutes.Serve warm with a big scoop of vanilla ice cream. The melted ice cream mixing in with the warm berries is the best! Enjoy</div>

Baking hasn't been at the front of my kitchen dreams lately, simply because
it's been too hot to think about turning the oven on. But then I remembered ice
cream sandwiches, and I realized—<br />
1. Why had I forgotten about ice cream
sandwiches?!<br />
2. Now there's a good reason to turn the oven on. I <em>need</em>
cookies because I <em>need</em> ice cream sandwichesFor these I made a
dozen trail mix cookies (recipe follows) and filled them with chocolate
ice cream and tripple berry frozen yogurt. But you can use any ice cream
flavor you like or have on handWe teamed up with Nature
Box, who will send you monthly healthy goodies (they don’t stay healthy for
long in my kitchen), to create the trail mix cookies. We used their Cherry
Crumble Granola and Tart & Tangy Fruit Medley in the cookie batterTrail Mix Cookies, make one dozen.<br />
1/2 cup (1 stick) softened butter<br />
1/2 cup sugar<br />
1/4 cup brown sugar<br />
1 egg<br />
1/2 teaspoon vanilla extract<br />
3/4 cup flour<br />
1/2 teaspoon baking soda<br />
1/4 teaspoon salt<br />
1 cup soft NatureBox
Cherry Crumble Granola (about 4 ounces)<br />
1/2 cup NatureBox
Tart & Tangy Dried Fruit Medley (about 2 ounces)<br />
In a large bowl cream together the butter and sugars. Stir in the egg and
vanilla extract until just combined.<br />
In another bowl stir together the flour, baking
soda, salt, granola and dried fruit. Stir the flour mixture into the butter
mixture until a soft dough forms. Employ all your will power not to eat the
doughLine a baking sheet with parchment paper and drop on spoonfuls of
dough. Bake at 350°F for 12-14 minutes. You want the edges of the
cookies to just begin to brown, while the centers stay soft.

Allow the cookies to cool before immediately wolfing them down. Or
add a scoop of ice cream between two cookies. If you have any left.<br />

I've made a few different kinds of cheesecake before but I wouldn't say
that I have a favorite go-to recipe. Until now. Trey loves cheesecake.
So overtime I'd like to develop what I consider to be the perfect
cheesecake recipe. My mother-in-law has an apple pie recipe that she
swears by, and it's her husband's favorite. It's just kind of a cute
thing they have. I love it. So I'm on the hunt for my perfect cheesecake
recipe.This one is very, very good. It has a chocolate graham cracker
crust. A thick, creamy but not overly sweet cheesecake. And then a sweet
strawberry topping. I will definitely be making this again!<br />
Strawberry Cheesecake.<br />
Crust:<br />
1 cup crushed chocolate graham crackers<br />
1/4 cup melted butter<br />
Cake:<br />
5 (8 oz) packages of cream cheese<br />
1 3/4 cup sugar<br />
2 tablespoons flour<br />
2 teaspoons vanilla extract<br />
5 eggs + 2 egg yolks<br />
1/3 cup milk<br />
1 1/2 teaspoons lemon zest<br />
Topping:<br />
1/3 cup water<br />
1/3 cup sugar<br />
32 ounces fresh strawberries<br />
For
the crust, crush the graham crackers in a food processor or blender.
Stir in the melted butter. Then press the crust into the bottom of a
greased spring form pan.<br />
For the cake, blend together the softened cream cheese, sugar, flour
and vanilla extract until well combined and almost fluffy. Blend in the
eggs and yolks with a low setting (if using an electric mixer) until
just combined. Stir in the milk and lemon zest. Pour the batter over the
prepared crust and bake at 325°F for 1 1/2 hours. Allow to cool for
15-20 minutes before refrigerating.<br />
For the topping, first set aside 15-16 strawberries for the topping.
In a pot combine the water, sugar and the remaining strawberries (tops
removed) and cook over low heat. Mash the strawberries into a paste and
allow to simmer until the liquid has reduced slightly. Remove from heat
and allow to cool. Reserve about 1/4 of the liquid.<br />
<br />
Spread the strawberry topping over the cheesecake. Press the 15-16
top strawberries into the jam. Now drizzle that reserved liquid over the
top of these strawberries so they are all slightly sweetened.<br />

<li><b>Cake:</b> Heat oven to 400
degrees F. Line a 15 1/2 x 10 1/2 x 1-inch jelly-roll pan with nonstick
foil. In a small bowl, combine cake flour, cocoa powder, baking powder,
and salt.</li>
<li>Separate egg whites and yolks
into 2 large bowls. Beat whites on medium-high speed until foamy.
Gradually beat in 1/2-cup of the sugar. Continue to beat on high speed
just until stiff (but not dry) peaks form.</li>
<li>Using same beaters, beat yolks
with the remaining 1/4-cup sugar and extracts until thickened, about 3
minutes. On low speed, beat in flour mixture until blended. Stir in 1/4
of beaten egg whites into mixture. Fold in remaining whites. Spread in
prepared pan; smooth top. Bake 12 minutes or until top springs back when
gently pressed. Let cool 2 minutes on a wire rack.</li>
<li>Dust a clean towel with
confectioners' sugar; invert cake onto towel. Remove pan; carefully peel
off foil. Starting from the short end, roll up cake in towel; place
seam side down on wire rack; cool completely.</li>
<li><b>Filling:</b> Unroll cake
and spread evenly with ice cream. Roll up cake. Wrap tightly in nonstick
foil and freeze, seam side down, overnight until firm.</li>
<li><b>Glaze:</b> In a small
saucepan, heat cream, chocolate, and corn syrup over low heat until
chocolate is melted and glaze is shiny and smooth, 1 to 2 minutes. Stir
in extracts; cool to room temperature.</li>
<li>Unwrap cake; trim ends. Place
cake on a wire rack over waxed paper. Pour glaze along top of cake roll,
spreading with a spatula to cover sides. Garnish top of cake with
chocolate curls or shavings. Freeze cake until firm</li>

<li>Fold in pecans and peanut butter chips, mixing until just combined.</li>

<li>Fold in Snickers bar chunks.</li>
<li>Pour mixture into a greased 8-inch square pan (or, if you have a special brownie pan,

<li>Bake for 1 hour and 30 minutes or until a long pick inserted in the center comes out clean.</li>

<li>Shredded coconut</li>

<ol>
<li>Preheat oven to 400 degrees and line a baking sheet with parchment paper.</li>
<li>Unfold puff pastry dough onto a lightly floured surface. With a rolling pin, roll dough to stretch it out slightly.</li>
<li>Using a pastry scraper or a pizza cutter, cut dough into squares (approximately 2 in x 2 in). </li>
<li>Whisk together the egg and water and brush the egg wash on each
square of puff pastry dough (only on one side) and reserve the leftover
egg wash.</li>
<li>Place about 1 teaspoon of Nutella on each square.</li>
<li>Fold each square into a triangle and, using the prongs of a fork, seal the edges of the dough.</li>
<li>Brush the egg wash over each triangle.</li>
<li>Melt a few tablespoons of Nutella and drizzle over each triangle.</li>
<li>Sprinkle about 1 teaspoon of shredded coconut on top of each triangle.</li>
<li>Bake for 10-12 minutes or until the puff pastry is golden brown and the coconut is toasted.</li>

<li>Preheat oven to 400 degrees and line a baking sheet with parchment paper.</li>
<li>Unfold dough onto a lightly floured surface. With a rolling pin,
roll the dough into a 9x13 rectangle (measurement is only approximate).
Using a pastry scraper or a pizza cutter, cut dough down the middle.</li>
<li>Whisk together egg and water and brush the egg wash on each
rectangle of puff pastry dough (only on one side) and reserve any
leftover egg wash.</li>
<li>Spread the apple cinnamon jam on one half of the pastry. Sprinkle 1 1/2 tablespoons of light brown sugar over the jam.</li>
<li>Place the other half of the pastry (egg wash side down) on top of
the jam and press the two halves together using your hands or roll
lightly with the rolling pin. Gently press edges to seal.</li>
<li>Using the pastry scraper or pizza cutter, cut the pastry into 1/2 inch strips.</li>
<li>Working one at a time, gently twist each strip and lay on baking
sheet making sure to press down the ends so that they don't curl when
baking. When all of the strips have been twisted and placed on the
baking sheet, lightly brush each twist with the remaining egg wash and
sprinkle with the remaining brown sugar.</li>
<li>Bake for 10-12 minutes or until the twists are golden brown.</li>
<li>Remove from the oven and serve warm.</li>

<li>Preheat oven to 400 degrees. Prepare a muffin tin by spraying with non-stick spray. </li>
<li>On a lightly floured surface, roll out puff pastry dough. The dough
is usually sectioned off into thirds so cut along the fold lines. Next,
make two cuts the other way so that you have 9 squares of puff pastry.</li>
<li>Whisk together the egg and water and brush the egg wash over the squares of puff pastry.</li>
<li>Take a muffin tin and place one square of puff pastry in each cup
(you should fill 9 cups). Push the puff pastry in the tin but don't
press it against the sides.</li>
<li>Place one tablespoon of Nutella on each puff pastry square.</li>
<li>Place one slice of banana on each tablespoon of Nutella.</li>
<li>Sprinkle about a teaspoon of coconut over each cup.</li>
<li>Bake for 10-12 minutes or until the coconut is lightly browned and the puff pastry is golden brown.</li>

<i>Mixing</i> -- It's important to never over-mix or over-beat the
dough. Be sure to follow the ingredients, measurements and instructions
carefully. A mixer or food processor can be used for this step of the
process. If a mixer is used, scrapes the sides of the bowl often and
beat on low speed until just incorporated. If a food processor is used,
pulse the mixture until a ball forms. Independent of which method you
use, the dough will come together very quickly. This is tart crust so
kneading is unnecessary.<br />

ball of dough in plastic wrap and place in the refrigerator for at least
30 minutes. The dough can keep in the refrigerator for 3 days. The
longer it sits in the refrigerator to chill, the more the gluten in the
dough will relax. If you don't relax the dough, chances are you'll have
tough dough that pulls away from the pan when it's in the oven. Trust
me...I know from experience.<br />
<br />
<i>Rolling</i> -- Place the dough on a lightly floured surface and roll
out dough until it's about 1/4 inch thick. Roll the dough around the
rolling pin and unroll it on to the tart pan. Press the dough gently
into every nook and cranny and cut off excess dough with a knife. As
mentioned earlier, some don't roll out the dough. If you're one of these
people (my hand is raised), simple place the ball of dough on the tart
pan and spread it into every nook and cranny using your fingertips. Cut
off the excess dough with a knife.<br />
<br />
<i>Preparing</i> -- Tart crust has a tendency to rise when baking. To
prevent this from happening, prick the dough with the tines of a fork.
Cut out a circle of parchment paper and place it on top of the bottom of
the shell. Fill the pan with pie weights. This technique is called
"blind baking." If you choose not to use pie weights, simple prick the
dough with the tines of a fork.<br />
<br />
<i>Baking</i> -- Place the tart pan/shell into a preheated oven and bake
for approximately 15 minutes. Remove the pie weights and parchment
paper and keep in the oven until the shell turns into a golden brown
color. Allow the shell to cool completely before adding the cream and
berries. If you don't use pie weights, simply keep an eye on the shell
and remove it from the oven when it turns a golden brown color,
approximately 15 minutes.<br />

Ingredients:<br />

<li>1 frozen puff pastry sheet, thawed</li>
<li>Nutella</li>
</ul>
Directions:<br />
<ol>
<li>Preheat oven to 400 degrees. Prepare a baking sheet by placing parchment paper on it.</li>
<li>Roll out puff pastry sheet onto a lightly floured surface and, using
a rolling pin, roll it into a 10x12 rectangle (approximately).</li>
<li>Spread the Nutella onto the puff pastry dough in a thin layer using a spatula.</li>
<li>Take one side of the puff pastry dough and roll the dough inward, stopping at the middle of the dough.</li>
<li>Take the other side of the puff pastry dough and roll it inward until it meets the other roll.</li>
<li>Press the two rolls together so that they maintain that shape when in the oven.</li>
<li>Slice the log into 1/2 inch slices by using a sharp knife.</li>
<li>Place the slices onto the parchment paper and bake for 10-15 minutes or until the dough is golden brown.</li>
<li>Remove from the oven and place the Nutella Palmiers on a wire rack to cool.</li>

<li>1 cup sugar</li>
<li> 1/2 cup (1 stick) butter, softened</li>
<li>5 ripe bananas, mashed</li>
<li>1 egg</li>
<li>1 teaspoon vanilla extract</li>
<li>1 1/2 cups all-purpose flour</li>
<li>1 teaspoon baking powder</li>
<li>1 teaspoon baking soda</li>
<li>1/2 teaspoon salt</li>
<li>1/4 cup unsweetened cocoa powder</li>
</ul>
Directions:<br />
<ol>
<li>Preheat oven to 350 degrees. Grease a 13x9 inch baking pan (or, if you have a special brownie pan, go ahead and grease that...these pans are the best!).</li>
<li>Beat sugar and butter in a bowl until creamy.</li>
<li>Add bananas, egg and vanilla and beat until well blended.</li>
<li>Combine flour, baking powder, baking soda and salt in a medium bowl.
Add this mixture to the banana mixture and beat until well blended.</li>
<li>Divide batter in half. Stir cocoa into one half. Spread the
chocolate batter into the prepared pan. Top with the plain batter; swirl
with a knife.</li>
<li>Bake for 30 to 35 minutes or until edges are lightly browned and a toothpick inserted in the center comes out clean.</li>
<li>Cool completely in pan on a wire rack. Cut into bars.</li>

<li>Place sugar, dark brown sugar, butter, eggs and vanilla in a bowl and whisk together until smooth.</li>
<li>Add baking soda, salt and flour to the sugar mixture and whisk together until smooth.</li>
<li>Fold in chocolate chips and Heath Bar bits.</li>
<li>Drop rounded tablespoonfuls (or use an ice cream scooper) onto baking sheet approximately 2 inches apart.</li>
<li>Bake for 10-12 minutes, remove from the oven and allow to cool on
baking sheet for 1-2 minutes and then transfer to a wire rack to cool
completely.</li>

<li>1 tablespoon milk</li>

<li>Preheat oven to 350 degrees and grease a 9x13 baking dish.</li>
<li>Mix together the sugar, butter, syrup, eggs and flour.</li>
<li>Fold in 3/4 of the chopped Oreo Cookies.</li>
<li>Pour into baking dish and sprinkle the remaining chopped Oreo Cookies over the top.</li>
<li>Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.</li>
<li>Allow to cool for 10 minutes, cut into squares and remove from dish.</li>
<li>Drizzle with icing (Icing Directions: Mix together all three
ingredients. Add more sugar if need be until desired consistency is

<li>2 cups sugar</li>
<li>2 teaspoons vanilla</li>
<li>Chocolate frosting</li>

<li>Allow the butter and eggs to stand at room temperature for 30
minutes. Grease and flour muffin cups, or line with paper bake cups.
Preheat oven to 350 degrees.</li>
<li>Mix together the flour, cocoa powder, baking soda, baking powder, and salt.</li>
<li>Combine milk and coffee in a 2-cup measuring glass.</li>
<li>Beat the butter with an electric mixer for 30 seconds and then
gradually add sugar and continue to mix. Add eggs, one at a time, and
beat well after each addition. Mix in the vanilla.</li>
<li>Alternate between the flour and milk mixture and add these two mixtures to the butter mixture. Beat well between each addition.</li>
<li>Spoon batter into muffin cups, filling each 3/4 full.</li>
<li>Bake approximately 18 minutes or until the tops of the cupcakes spring back.</li>
<li>Cool cupcakes in muffin tin on wire rack for 5 minutes and then remove from the muffin tin and cool completely.</li>
<li>Top the cupcakes with frosting.</li>

<ol>
<li>Preheat oven to 350 degrees and prepare a muffin tin by either greasing over filling with muffin cups.</li>
<li>Mix together one cup sugar, butter, syrup, eggs, and flour until smooth.</li>
<li>Mix together the cream cheese, egg, 1/2 cup sugar, and extract.</li>
<li>Pour brownie batter into muffin cups filling halfway.</li>
<li>Pour cream cheese mixture over brownie mixture in muffin cups (1-2 teaspoons).</li>
<li>Pour 1 teaspoon of brownie batter over the cream cheese mixture.</li>
<li>Take a toothpick and swirl the mixtures together in each muffin cup.</li>
<li>Bake for 30 minutes or until a toothpick inserted in the center comes out clean.</li>
